Croatian food splits roughly into two worlds: the Mediterranean coast, built on olive oil, fish and herbs, and the heartier continental interior, where stews, meat and paprika rule. Wherever you go, ingredients are seasonal and portions are generous.
Signature dishes to try
- Peka - meat or octopus slow-cooked under a bell-shaped lid covered with embers. Most konobas (taverns) need it ordered hours ahead.
- Crni rizot - black cuttlefish risotto, stained with squid ink, common along the Dalmatian coast.
- Pasticada - Dalmatian beef braised in wine, prunes and spices, served with gnocchi.
- Istrian fuzi and pljukanci - hand-rolled pasta, often topped with truffles or game ragu.
- Cevapi - grilled minced-meat fingers with flatbread, ajvar and raw onion, popular inland.
- Sarma - cabbage rolls stuffed with meat and rice, a winter staple.
Street food and snacks
- Burek - flaky pastry filled with cheese, meat or spinach, the classic on-the-go bite.
- Fritule - small fried dough balls dusted with sugar, sold at markets and festivals.
- Soparnik - a thin Swiss-chard pie from the Poljica region near Split.
- Grilled sardines at coastal fish markets, especially in summer.
What to drink
- Wine - try Plavac Mali (a robust red from Dalmatia) and crisp white Malvazija from Istria. Posip and Grasevina are also widely poured.
- Rakija - fruit brandy offered as a welcome or a digestif; travarica (herb) and sljivovica (plum) are common.
- Coffee - Croatians take coffee seriously; a slow morning kava is a social ritual, not a takeaway grab.
- Beer - Ozujsko and Karlovacko are the big domestic lagers.
Dining tips and etiquette
- Lunch is often the main meal; many konobas close in the afternoon and reopen for dinner.
- A cover charge (couvert) for bread is normal. Tipping around 10 percent is appreciated but not obligatory.
- Order seafood by the kilogram - confirm the price before it is weighed to avoid surprises.
- Tap water is safe; ask for a karafa (carafe) if you do not want bottled.
- Coastal restaurants in peak season fill fast - reserve dinner, especially for peka.
